Taco Beef Stuffed Jalapeños

Organic Ingredients

20 lg jalapeños, halved and seeded

2-3 extra jalapeños, stems removed and minced (adjust amount of peppers/seeds to desired level of heat)

1lb lean ground beef, cooked and well browned

4 green onions, sliced

1 cup cream cheese, softened

1 cup shredded sharp cheddar

1 tbsp lemon juice

2 tbsp Taco Seasoning

Dash of Tabasco

Pinch Real Salt & black pepper


Preheat oven to 400°.

Arrange halved jalapeños on a large baking sheet lined with parchment paper.

Cook the ground beef (I like to cook mine until its a bit browned and crispy) and then chop it very fine so it mixes into the filling.

In a large bowl, combine the minced beef, and all remaining ingredients. Mix very well, and adjust seasonings to taste.

Using a small spoon, scoop the mixture into each halved jalapeño. Sprinkle with more cheese if desired, or some crushed chili flakes or more green onion.

Bake at 400° for 15 minutes, broil on high for 5 minutes to brown the tops. Makes 40 halves!
