Cauliflower Mac 'n Cheese

Organic Ingredients

1 lg head cauliflower, riced (grated or pulsed in a food processor)

1/2 red onion, chopped

10 lg crimini mushrooms, sliced

3 tbsp butter

3/4 cup chopped, crispy, back bacon (double smoked)

1 tbsp ground mustard

1 tbsp garlic powder

1 tbsp smoked paprika

1 tbsp parsley

1 tbsp oregano

3 cups shredded mozzarella

1 cup sour cream or Greek yogurt

Real Salt and black pepper

Crushed chili flakes


Saute butter,onions and mushrooms in a large dutch oven until tender. Add in bacon, S&P, and crushed chili flakes. Cook for 2 minutes, add in remaining spices, and remove from heat. Add riced cauliflower, 2 cups of the mozzarella, and sour cream. Stir everything well and (if your pot can go directly into the oven), sprinkle remaining cheese on top. Add a bit more crushed chili flakes and parsley on top, and bake covered at 375 for 30 minutes. Remove lid, and broil on high for 5 minutes or until the cheese is bubbly and browned.
