Sloppy Joe Stuffed Peppers

Organic Ingredients

6 bell peppers, tops cut off and insides removed

1 lb ground beef, turkey, or chicken (extra lean)

1 medium white onion, minced

5-6 crimini mushrooms, chopped

4 garlic cloves, minced

1 small green bell pepper, minced

2 tbsp tomato paste

1 can diced tomatoes (no salt added)

1/3 cup ketchup (I always use Heinz Reduced Sugar)

1 tbsp Dijon mustard

1 tbsp cane sugar or a squirt of honey

2 tbsp Worcestershire Sauce

1 tbsp cumin

1 tbsp chili powder

Crushed chili flakes

Real Salt & pepper, to taste

1 cup finely grated cheddar cheese


Prepare peppers by removing the tops and cleaning out the insides. Set them upright in a glass baking dish. Add meat to skillet and break into a crumble as it browns. Add onions, mushrooms, green pepper, and garlic and cook for 5 minutes. Add in all remaining ingredients (except for the cheese) and adjust seasoning to your taste. Simmer for 15 minutes on med-low. Stuff mixture into the peppers, add enough water to the baking dish to just cover the bottom, and tent with tinfoil. Bake at 400 for 20 minutes, remove tinfoil, sprinkle on the cheese, and bake for another 15 minutes or until peppers are tender crisp (you don't want droopy, mushy peppers).
