Alfredo Sauce- Slimmed Down!

Organic Ingredients

2 tbsp. grass fed butter

1/3 cup yellow onion, minced

5 garlic cloves, finely minced

1 cup unsweetened plain cashew milk, divided

1 1/2 cup light ricotta

1/2 cup 0% Greek yogurt

3/4 cup freshly grated Parmesan

Real Salt & black pepper

Splash of lemon juice


Saute onion in butter for 10 minutes. Add the garlic and saute an additional 1-2 minutes. Stir in 1/3 cup of cashew milk, ricotta and Greek yogurt. Mix well, add the parmesan and lemon juice, and season to taste with S&P. Simmer on low for 20 minutes- the sauce will thicken, and the texture of the ricotta will intensify.  Pour into Vitamix or high-powered blender, add remaining 2/3 cup of cashew milk, and whiz until smooth and creamy! Serves 6.
