This is one of those "recipes" that I throw together with whatever I have on hand, but it does contain a few critical ingredients: eggs, egg whites, a vegetable for the crust (turnip, sweet potato, spaghetti squash, etc.), that fits your diet, an additional protein, and vegetables. Below is how I specifically made the one pictured here!

Organic Ingredients

1 medium turnip, grated 
1 small pkg chicken/turkey sausage, cooked out of casing and crumbled
6 eggs
6 egg whites
1 pkg dry soup mix (I used organic broccoli cheddar)
Bell peppers, chopped
Red onion, chopped
Zucchini, thinly sliced
Fresh dill, minced
Hot sauce
Real Salt
Black pepper


Preheat oven to 400°. Press grated turnip into a greased 9' x 9" casserole pan to form a compact "crust," and bake for 10-15 minutes until the top is slightly browned. Lower heat to 375. Evenly spread the crumbled sausage, bell peppers, red onion, and zucchini slices on top of the crust. In a bowl, whisk together the eggs, egg whites, hot sauce, Real Salt, black pepper, dill, and dry soup mix. Pour over the top of everything. Bake for 15 minutes, or until eggs are cooked through. Serves 6.
