Lemon Poppy Seed Muffins

Organic Ingredients

1/2 cup coconut flour

1 tsp xanthan gum

3/4 tsp baking poweder

3/4 tsp baking soda

1/4 tsp Real Salt

1 tbsp poppy seeds

2 tbsp lemon zest

2 tbsp Buttery Coconut Oil

1 lg egg

1 tbsp vanilla extract or paste

1/3 cup 0% plain Greek yogurt

1/3 cup Sugar-Free Vanilla Syrup

3 tbsp freshly squeezed lemon juice

3/4 cup unsweetened vanilla cashew milk 

2 scoops vanilla protein powder (I used Diesel brand)


Preheat oven to 350°, and lightly coat 8 muffin cups with coconut oil. In a medium bowl, whisk together the coconut flour, xanthan gum, baking powder and soda, salt, poppy seeds, and lemon zest. In another bowl, whisk together the coconut oil, egg, vanilla and Greek yogurt. Mix in the vanilla syrup, lemon juice, and cashew milk. Add protein powder and the other bowl of dry ingredients, and stir well to fully combine everything. Let the batter sit for 5-10 minutes, and then spoon evenly into the prepared muffin cups. Bake for 20 minutes or until a toothpick inserted into the middle comes out clean.
