Organic Ingredients


1 cup chia seeds

1 cup flax seed

1/2 cup flax meal

2 cups unsweetened coconut flakes

1 cup pecan pieces

1 cup sliced almonds

1/3 cup hemp hearts

1 tsp Redmond's Real Salt

1/4 cup pumpkin seeds

2 tbsp cinnamon

3 scoops Diesel vanilla protein powder (anything clean & low carb)

1/4 cup coconut oil

1/4 cup MCT oil

2 tbsp pure vanilla extract

10 drops vanilla Sweetleaf Stevia

*additional sweetener if desired*SF Cinnamon Dolce is yummy*


Directions


Mix everything from the chia seeds down to the pumpkin seeds in a large bowl. Spread out on a large baking sheet and toast at 400° for 10 minutes. Remove from oven, stir well, and toast for another 5-10 minutes until everything becomes fragrant and JUST starts to brown.

In another bowl, melt the coconut oil and then add the MCT oil, vanilla extract, cinnamon, and Stevia.

Remove the dry mixture from oven, pour back into the large bowl, mix in the protein powder first, and then pour on the wet ingredients and mix very well until everything is evenly coated. Spread back out on the baking sheet, turn off the oven, and place the granola inside and leave it there until it's fully cooled. This allows it to continue toasting without ever burning. Store in airtight glass jars. Makes a LOT.
