Organic Ingredients

2lb ground chicken

8-10 slices honey ham (cleanest deli style meat you can find)

6 slices Swiss cheese

3 cups baby spinach, chopped

8-10 slices smoked back bacon

1 lg egg

1/2 cup almond flour

4 garlic cloves, minced

2 tbsp fresh parsley, minced

Dash of Tabasco

Squirt of Dijon mustard

Real salt & pepper to taste


In a large bowl, combine the ground chicken with the egg, almond flour, garlic cloves, parsley, Tabasco, Dijon, and S&P. Cover a small baking sheet with plastic wrap, and then evenly press the chicken mixture out onto the baking sheet to form a large, rectangular patty. Layer the slices of ham, then the Swiss cheese, and then the spinach. Using the plastic wrap as a guide, roll the meat into a large rolled loaf and place it inside a greased glass baking dish, seam-side down. Lay the back bacon slices on top of the loaf, and bake at 375 for 45 minutes or until thoroughly cooked through (can check with a meat thermometer). Slice into 6 even pieces and serve!
