Cauliflower Fried Rice

This "fried rice" is cleaned up by using whole, unprocessed foods, and riced cauliflower. 

Organic Ingredients

1 tbsp Buttery Coconut Oil
2 lg boneless, skinless chicken breasts, chopped into small pieces
1 red bell pepper, chopped fine
1 green bell pepper, chopped fine
1 red onion, chopped fine

3 celery stalks, chopped fine

1 cup chopped broccoli
10 snap or snow peas, chopped
5 garlic cloves, minced
12 crimini mushrooms, sliced and halved
1 lg head cauliflower, box grated or pulsed in a food processor (you want a crumbly, rice, texture)
2 whole eggs, or 1 egg + 2 egg whites
1/3 cup coconut aminos (tamari, soya, or Bragg's Liquid Aminos work as well)
2 tbsp fresh grated ginger
Real Salt & black pepper
Pinch of crushed chili flakes
Handful of chopped green onions (save some for garnish)


In a large saucepan, cook the chicken seasoned with salt & pepper. Remove from pan and set aside. Saute the peppers, onions, snow/snap peas, and mushrooms, in the coconut oil until cooked through. Add the garlic and saute until aromatic. Add in all remaining ingredients (except for the eggs) and cook for 4-5 minutes, including the chicken and rice. Create a hole in the middle of the pan, and crack the eggs inside. Whisk around as they cook and then mix everything together. Taste and adjust seasoning (depending on whether you use aminos, soya sauce, or tamari, you'll likely want to add some more at the end). Garnish with additional sliced green onions!
