Baked Cauliflower

Organic Ingredients


1 lg head cauliflower, stem and leaves removed, chopped into bite-size pieces

1 medium onion, minced

4-5 garlic cloves, minced

3 green onions, thinly sliced

1 small pkg mini grape tomatoes (or regular, quartered)

1 pkg Boursin Cheese, Garlic & Fine Herb (any other flavoured soft cheese would work)

2 cups Creamy Herb & Garlic Shredded Cheese, reserve some to sprinkle on top (can use any type of shredded cheese)

1/2 cup sour cream

1/4 cup paleo mayo

Real Salt & cracked black pepper


Directions


Preheat oven to 400. Spray a 9x13 glass baking dish with coconut oil. In a large bowl, add all ingredients and mix very well. Taste to adjust seasonings. Spread out evenly in the baking dish, and cook for approx. 20 minutes. Broil on high for 3-5 minutes to brown and crisp up the top. Serves 12.
