Smashed Broccoli
Organic Ingredients
3 lg broccoli crowns, stems removed, chopped into big chunks
1/4 cup herb & garlic cream cheese or Boursin cheese
1/3 Greek yogurt
1/3 cup shredded mozzarella
3 green onions, thinly sliced
Pinch Real Salt & fresh cracked black pepper
Directions
Steam broccoli until fork tender, but still bright green. Strain off excess water, and rough mash the broccoli with a potato masher. Stir in the remaining ingredients, and adjust seasoning to taste.
Serve hot, but also delicious leftover as cold broccoli salad!
