Organic Ingredients


1/4 cup natural cocoa powder (I use Camino)

2 tbsp coconut flour

3 lg eggs, at room temperature

10 tbsp butter

1 tbsp coconut oil (I use Nutiva Buttery Coconut Oil)

1/2 cup Erythritol

1 tbsp pure vanilla extract

2 oz unsweetened baker's chocolate (I use Camino)

Pinch of Redmond's Real Salt


Directions


In a small bowl, mix the cocoa powder, coconut flour, and salt together. In a large bowl or stand mixer, add the erythritol, eggs, and vanilla, and whip on high until it has tripled in volume (5ish minutes). In a microwavable bowl, melt the butter, coconut oil, and chocolate together slowly using 30 second intervals, just until fully combined. Fold the egg mixture into the butter and chocolate in 3 parts. Once fully combined, fold in 1/3 of the dry ingredients, and repeat until everything is fully mixed. Pour into a greased loaf pan and place in a pre-heated 325° over for 45 minutes (or until a toothpick inserted into the middle comes out clean). Let cool completely, and slice into 12 pieces. Store in airtight container in the fridge. Can be re-heated for ultimate decadence!
